A. This is only part of an answer since I don't live in Victoria but I have lived in Korea and Taiwan and have visited Japan , which are all places that have this style of restaurant and they are often refered to as "Sushi Express". so I would look for this term in ads etc. Other wise I'd look in the Yellow pages and call a couple of Japanese places and ask them.

A.
